شرح الوظيفة
- Monitors compliance with SOPs by subordinates.
- Conducts frequent checks in assigned section, with regard to compliance with procedures, hygiene, storage and bar stocks, when required by kitchen superiors.
-Enforces safety procedures and cleanliness throughout the section of the kitchen(s) of which he/she is responsible.
-Checks that all food is issued with a “micros ticket.”
-Monitors the preparation of food for special orders, buffet presentation, VIP parties, and other functions as required.
- Inspects, selects and uses only the freshest food products of the highest standard in the preparation of menu items.
-Relieves any cooking station as needed.
-Observes production flow and makes adjustments in order to adhere to cost control and quality requirements.
-Supervises proper receiving, storage (including temperature-setting) and rotation of food products to comply with Health Department Regulations.
-Prepares daily issues for kitchen supplies and food items as approved by superiors.
-Checks product freshness in storage by monitoring the covering, labelling, dating and storing fresh produce in proper containers.
-Assists the Executive Chef in scheduling staff, so that proper coverage is maintained, and engages/releases Kitchen staff as required in the absence of the him.
-Checks punctuality and presence, on a daily basis and reports to the Assistant Executive Chef.
-Checks grooming (personal hygiene and uniforms) of team members according to the hotel’s standard.
-Supervises the work of his kitchen team members and provides regular feedback
-Writes, maintains, and updates all menu specifications, recipes and pictures, production forecasts as per instructions.
