Job Description
- Keeps all kitchens and back of the house areas clean and organized all the time.
-The Chief Steward is expected to assist the Executive chef in Scheduling, Training and Managing the junior staff.-Prepares daily income reports for onward transmission to the management.
-Assists the Executive chef in organizing all kinds of functions.
-Assists the Executive chef in finalizing all the paper work.
-Assists the Executive chef in setting up and carrying out inventories.
- Executes all tasks of each steward position in the department in case of his absence.
- Supervises and coordinates the activities of all stewards to ensure the smooth and efficient operation of the department.
- Ensures the proper use and preventative maintenance of all machinery and equipment are used by the stewarding department.
- Ensures the neatness, cleanliness and order of all kitchens, back of the house areas, Storage areas and kitchen machinery through constant monitoring and a vigorous cleaning schedules.
- Maintains controls against theft and wastage.
- Assures proper sanitation and hygiene techniques.
- Maintains the wash ware operation to ensure proper supply of clean small operating equipment.
- Controls breakage of all china and glass ware.
- Inspects garbage containers regularly.
- Stores, stocks, washes and restocks all small operating equipment in designated areas according to predetermined stock.
- Works closely with the food and beverage team to coordinate banqueting activities.
- Responds properly in any emergency or safety situations.
